Oficina do Pão - intimidade e gesto na história da broa tradicional
(Bread Workshop – Intimacy and Gesture in the History of Traditional Broa)
From the sowing of the corn to the filling of the dough trough, this workshop unfolds in a delicate, rhythmic timespan. What recipes have endured in our region and made their way to the table? In this workshop, we’ll share the story of broa minhota—a traditional cornbread—and learn how to preserve it by getting hands-on with the dough and, once it’s ready, (re)discovering its flavor.
The story of broa is the narrative of a region, its culture, and its people. It is also the story of taste, of farmers, of mills, and of bakers who have kept its value alive. A flavor can have distant origins and travel across continents through time. We are made of sourdough, hands in the dough, and many flours mixed in—but what makes us unique is the place we choose today. Today, we can reinterpret this recipe from new perspectives—while staying rooted in the knowledge passed down through generations.
